Crunchy on the outside, soft and juicy on the inside, these juicy little chicken bites remind me of chick-fil-a nuggets that I use to eat,

especially with that yummy honey mustard dipping sauce that’s ridiculously easy to make.

Perfect for a BBQ or for your kids lunch, there breaded with coconut flour and fried in coconut oil, but you would never know because they don’t have a strong coconut taste at all.

So you get all the awesome coconut benefits with out the taste awesome!

There is nothing more satisfying than popping a paleo, grain, and gluten free chicken nugget in your mouth except maybe popping 5 or 10 or the whole batch!

Plus that honey mustard dipping sauce do I really need to say anything else? I think not!

Paleo Chicken Nuggets with a Honey Mustard Sauce

2 chicken breasts
1 egg
1/2 cup coconut flour
1 Tablespoon onion powder
1 Tablespoon garlic powder
1/4 tsp Salt and pepper
1/3 ~ 1/2 cup coconut oil or cooking fat of your choice.

Add 1/3 ~ 1/2 cup coconut oil to a saute pan. Heat to medium heat.
Cut chicken breasts into cubes / nugget size pieces.
Place 2 bowls on your counter crack the egg in one of the bowls and mix it up with a fork.
Put the flour, salt & pepper, onion powder, and garlic powder in the other bowl and mix to combine.
In batches dip chicken in the egg mixture and coat well.
Then dip in the dry mixture (coconut flour and spices) and coat well.

Fry on medium heat for 5-7 minutes, or unitl cooked through, (I eat a few to “taste test” them) flipping to cook both sides of the nuggets.
Once cooked through spoon out with a slotted spoon and place on a paper towel to drain.
  • Do not try to fry them on high heat. The coconut flour will burn! Stick to medium heat and let them fry longer.
  • To bake these- bake on 400 for 20-25 minutes. I omit the coconut oil and drizzle about a tablespoon of olive oil to bake them.

Honey Mustard Sauce:

5 tbsp honey
3 tbsp stone ground mustard
1 tbsp apple cider vinegar

In a small bowl mix all the ingredients together and it’s ready to dip those crunchy yummy chicken nuggets in.
